Beluga or caviar lentils are shiny and black on the outside and yellow on the inside. They are very small and almost round. The lentils are named for their similarity in appearance to caviar. They are also called beluga lentils and have a high level of protein.

These lentils are used primarily for soups and salads where their black color adds a visual appeal.

This lentil has two names, beluga or caviar lentil, because of the similarity they have with Beluga caviar (Beluga sturgeon roe).
The lentil is very small and semi spherical shape. Cooking softens their black color and makes for a lentil which is very tender, has a very fine texture, a great taste, and which does not lose its skin once cooked.

Culinary uses:

Cook this lentil like any other variety to make vegetable soup or salads, but enjoy the added bonus of the lentil's visually striking black color.

Does not need to presoak, but we recommend doing so for at least two hours.

Nutritional value:

The Beluga lentil has more protein then all other varieties of lentils. It is a great source of vegetable protein as well as rich in carbohydrates and fiber, which offers a lot of energy. The fiber regulates sugar and cholesterol, and the lentil is also rich in potassium, phosphorus, iron, and vitamins B1 and B6. The dark color of its skin is due to the presence of anthocyanins, the pigment which protects us from free radiation damage.


For La Salmantina, it all started in 1933 in La Vellés, a small town of Salamanca and the capital of the region of the Armuña. Originally, they were a small vegetable wholesale warehouse selling only bulk lentils and chickpeas: La Armunya lentils, pedrosillano chickpeas and Fuentesaúco chickpeas.

Today, these three varieties are protected by Denominación de Origen, an official certification of the product's quality and authenticity. The regulatory boards of La Armunya lentils, Pedrosillo chickpeas, and Fuentesaúco garbanzos guarantee the quality and origin of the legumes of this brand which has become so popular.

Over the years La Salmantina has added new products such as Lentil Pardina from Tierra de Campos, Beluga Lentils, Beans of Tolosa, Asturian Fabes and countless other delights of this wonderful land for growing vegetables.
