The Ibeas beans have a nearly round shape and a flashy burgundy color, with a beige spot where it germinates.

This purple bean is very popular for its softness, a very mild flavor and its slow cooking. It holds its skin during cooking and you hardly even notice it when eating.

It is a great tool for making a dish stand out visually due to the thickness and the "chocolate" color the broth produces. Beans from Ibeas have a great reputation in the Basque region, Cantabria, and Burgos, and are a key ingredient in the typical dish "Olla podrida." Indeed, red beans are highly prized  in the preparation of many common bean dishes in northern Spain.

There are several ways to prepare these delicious beans from Ibeas. "Olla podrida" is a typical, extremely popular dish in Burgos and Cantabria. You can prepare the typical style Tolosa beans or use them to make a delicious salad.


For La Salmantina, it all started in 1933 in La Vellés, a small town of Salamanca and the capital of the region of the Armuña. Originally, they were a small vegetable wholesale warehouse selling only bulk lentils and chickpeas: La Armunya lentils, pedrosillano chickpeas and Fuentesaúco chickpeas.

Today, these three varieties are protected by Denominación de Origen, an official certification of the product's quality and authenticity. The regulatory boards of La Armunya lentils, Pedrosillo chickpeas, and Fuentesaúco garbanzos guarantee the quality and origin of the legumes of this brand which has become so popular.

Over the years La Salmantina has added new products such as Lentil Pardina from Tierra de Campos, Beluga Lentils, Beans of Tolosa, Asturian Fabes and countless other delights of this wonderful land for growing vegetables.
