Olivares del Derramador extra-virgin olive oil is harvested early in the season, just before the pre-ripening of the fruit, when a very low oil yield is achieved in proportion to the weight of the olive. In exchange, the oil gains an aroma and tasteful nuances which set it apart from oils harvested later in the season.

A very healthy product results, one recommended by experts due to the demonstration that olive oil reduces cholesterol and the risk of heart attack. Among many other positive qualities, olive oil prevents mental deterioration and regenerates tissues and organs.

Tasting Notes: Fruity, complex olive in which you'll notice fruity notes of green almond, banana, artichoke, and fresh-cut herbs. Upon first taste, there's a light bitterness you'll notice immediately, along with a slight hotness as it goes down. The aftertaste is predominated by nuts, especially green walnut. 0.17% acidity.

Container: Glass container with black lacquer, 500 mL.

Culinary Uses:

Perfect both for cooking and for using plain. When used on its own, we recommend applying it just before serving, such that, when it comes into contact with the food (especially in the case of hot dishes), all its flavors and nuances come out. Excellent on meat, fish, and shellfish, but also on salads, vegetables, and on pasta dishes. Provides a special touch to mayonnaise and it pairs perfectly with semi-hard and blue cheeses.

This is an extra-virgin olive oil from Pago, meaning all of its olives come from the well-known estate of El Derramador, whose property dates from the middles of the 18th century. Here the first priority is always to do strict field work with responsible cultivation in order to achieve an impeccable product, using natural fertilizers yet utilizing the most recent practices. With a profound respect for water quality, the water used for irrigation is even potable, obtained from up to 120 meters and coming from the mountain range north of the estate. The objective: prepare the best extra-virgin olive oil by means of controlled irrigation and the optimization of natural resources in order to benefit the sustainability of the system.
