Organic sheep cheese with honey and rosemary from Finca Fuentillezjos has a maturation period of 45-60 days. The raw material for our cheeses comes exclusively from our sheep. They only provide us with 1 liter of milk per day, but that one liter is the perfect quality for making cheese. We do not use any additives in either the cheese or the rind, and this product is organic throughout its entire development, from the process of breeding, feeding, milking, and herding of the sheep to its careful artisan craftsmanship.

Origin: La Mancha

Ingredients: pasteurized sheep's milk produced by organic farming, organic herbs and honey, rennet, milk enzymes, calcium and salt.

Culinary uses:

The simultaneous mild and full flavor make this product ideal for appetizers, salads, starters, and any other myriad applications in kitchen. We recommend serving this delicious cheese with our Fig jam and Fig chutney.

Fuentillezjos is made up of 1,807 workers: 1,800 sheep of the Manchega breed who are responsible for the milk's production, and 7 people responsible for its collection and for the production and marketing of the cheeses. The three constituent families of Fuentillezjos see their way of life in the cultivation of the land.
