Armuña lentils have great cooking qualities: they don't break or lose their fine skin, and provide a clear broth which is full of flavor. On a culinary level, they stand out for their fine and uniform texture, as well as the softness of its skin, which seems almost nonexistent. Also rich in protein, fiber, iron, and calcium. In fact, its calcium content exceeds other varieties by 50%.

There are multiple recipes for cooking lentils from Armuña: The traditional way Grandma did, in tortillas, mousse, salads, hot cakes, ravioli, and risotto. For La Salmantina, it all started in 1933 in La Vellés, a small town of Salamanca and the capital of the region of the Armuña. Originally, they were a small vegetable wholesale warehouse selling only bulk lentils and chickpeas: La Armunya lentils, pedrosillano chickpeas and Fuentesaúco chickpeas.

Today, these three varieties are protected by Denominación de Origen, an official certification of the product's quality and authenticity. The regulatory boards of La Armunya lentils, Pedrosillo chickpeas, and Fuentesaúco garbanzos guarantee the quality and origin of the legumes of this brand which has become so popular.

Over the years La Salmantina has added new products such as Lentil Pardina from Tierra de Campos, Beluga Lentils, Beans of Tolosa, Asturian Fabes and countless other delights of this wonderful land for growing vegetables.
