This cured organic cheese, known for its intense flavor as maturation progresses, has a persistent aroma and a spicy aftertaste.

In the middle of La Mancha is La Finca Fuentillezjos, whose great expanses of land allow cattle to take advantage of the pastures and natural resources from an ecosystem typical of the region.

Cured organic Manchego sheep cheese from Finca Fuentillezjos has a minimum maturation period of 8 months.The raw material for our cheeses comes exclusively from our sheep. They only provide us with 1 liter of milk per day, but that one liter is the perfect quality for making cheese. We do not use any additives in either the cheese or the rind, and this product is organic throughout its entire development, from the process of breeding, feeding, milking, and herding of the sheep to its careful artisan craftsmanship.

Origin: La Mancha

Ingredients: Raw sheep's milk produced by organic farming, rennet, milk enzymes and salt.

Net Weight: 1 kilo, vacuum packed

Culinary uses:

The persistent flavor with spicy aftertaste make it ideal for appetizers, salads, starters, and numerous other applications in kitchen. We recommend serving this delicious cheese with our Fig jam and Fig chutney.

Fuentillezjos is made up of 1,807 workers: 1,800 sheep of the Manchega breed who are responsible for the milk's production, and 7 people responsible for its collection and for the production and marketing of the cheeses. The three constituent families of Fuentillezjos see their way of life in the cultivation of the land.
