Information:

The cheek is the most juicy type of pork, and as one of the most delicious sections it merits taking a bit of extra patience for its preparation--Felix Soto has done just that and allowed it the traditional amount of time to really bring out the flavor. The meat, located on the sides of the pig's head, is slightly fibrous, very gelatinous, and deliciously tender. Feel free to try this delicacy that will surprise both with its flavor as well as how easy it is to prepare--just heat and it's ready!

Pork cheeks (56%), extra-virgin olive oil, onion, brandy, salt, garlic, and pepper.
