Information:

The warm and humid weather in the region of Galicia is perfect for the growth of these mushrooms. They are a gourmet product with numerous possibilities for the crafty cook and are appreciated by lovers of good food everywhere. They can be eaten fresh, but improve their aroma and taste once dried.

Culinary uses

Useful ingredient for appetizers and entrees, scrambled eggs, soups, and creams or as a garnish for meat and fish. Add to rice, pasta, and Béchamel sauce. Can be used in desserts like torrijas (a sort of French toast).

Preparation:

If you want to regain their natural look, just cover with water for about 10 minutes. We recommend saving the water used in rehydration to prepare other recipes or to enrich rice dishes. If you use the mushrooms in a recipe that requires cooking, then you can add them directly as an ingredient rather than rehydrating them beforehand.
