These marine animals are able to emit this pigment, which is popularly called "tinta de calamar" to blind the attacker and to escape. This ink is very popular in Mediterranean countries for the preparation of some recipes.

Ingredients: cuttlefish ink, water and salt.

Dilute and add to the stew, 1gr is enough to spice 100 gr

Culinary uses:

A popular dish in Spain is squid in its own ink, stewed until very soft and accompanied by a thick sauce which usually includes, aside from ink, tomato and onion. A very famous dish is also black rice which gets its color from the squid ink. It similarly gives color to a dish in the Italian kitchen, where it is used to prepare spaghetti al nero di seppia.

Nutritional value:

Recently it was discovered that squid ink, in addition to serving as a condiment on different dishes, contains a number of amino acids and polysaccharides very efficient in preventing and curing some diseases. Researchers have found that this substance actively treats depression.

Black Rice with Calamari and Shrimp
Black rice with calamari (or the more typical one with cuttlefish) is ideal for preparing at home. Of all the rice dishes we have in Spain (and we have a lot!), this is one of the most incredible.
